Baked Beans

Baked beans are something I rarely eat, and that’s a bit unfortunate because they are delicious.  I rarely ever eat them because I’ve never made them before, so I only ever ate them when someone else brought them to a potluck or something.  Then I saw this recipe on Oh She Glows for vegan baked beans, and I knew it was going to be amazing. Don’t you just love it when you’re right?  I do.



As mentioned, this recipe is adapted from an Oh She Glows post.


1 (15oz) can pinto beans, rinsed and drained
1 (15oz) can cannellini beans, rinsed and drained
1 (15oz) can great northern beans, rinsed and drained
1 medium onion
1/4 cup molasses
3 Tbsp maple syrup
2 Tbsp mustard
3 Tbsp apple cider vinegar
1 (15oz) can petite diced tomatoes
1 tsp salt

*really, you can use three cans of whatever beans you want – this was just what I had on hand.


1. Dice the onion, and add it and all the beans to a large pan/pot on the stove.  Add the molasses, syrup, mustard, vinegar, salt, and tomatoes into the pan. Stir well over medium heat till all ingredients are incorporated.
2. Let simmer on the stove over low heat for at least an hour. Uncovered if you want it to be thicker and less liquidy, or covered if you prefer your baked beans more liquid-like.  After they have reached a consistency you like, eat them!

I did a rough calorie count on these beans and figured them to be about 215 calories, 44 carbs, 1 gram fat, and 11 grams of protein per (heaping) cup.  Can’t beat that!

As an afterthought, one of the greatest things about these baked beans, is that they don’t have bacon in them.  I get really irritated at our country’s need to put bacon on EVERYTHING.  I mean seriously, a bacon donut? A bacon cake? Bacon flavored ice cream?  This just doesn’t even sound remotely appetizing.  Maybe I’m just prejudiced because I don’t eat pig products, but it does really annoy me.  I’m not saying bacon isn’t delicious, I’m just saying that we really don’t need to look for ways to eat more of it. I’m pretty sure most of us have enough fat in our diets – we don’t need to go looking for excuses to add more.  Am I alone in this? Or is anyone else also super annoyed about the bacon obsession?

  2. As much as I love bacon, I agree with you. It’s everywhere and I honestly think it tastes best by itself, not mixed in with other stuff. Regardless, these look good and I may have to give them a try.

  3. I have to make these! Thank you for the recipe. YES! People don ‘t believe me, but it is true : rinsing beans, and getting rid of that sludge, takes away 99% of the ga they would otherwise produce.
    P.S. I am in love with Big Toby – those eyesssss. Reminds me so much of my Daisy dog , who I miss every day of my life. She was almost 13 when she went over the rainbow bridge.

    • Glad you liked the recipe! These were excellent I thought. Also glad you like my puppy pictures 🙂 Toby is a very handsome boy. He’s also suuuuuuper sweet. He is one of those “nanny dogs” that takes care of you when you feel bad, and if there are little kids around he watches over them and makes sure that everyone is okay. Such a sweet boy.
