As you can see, I’m continuing on from the last blog post and keeping with the fall/pumpkin theme. After all, today was maybe 2 degrees colder than yesterday and there was a slight breeze along with the constant 178% humidity. That means that we’re getting closer to fall, right? I think so. Hey, a little delusion never hurt anyone….
So, today I bring you Pumpkin Pie Oatmeal! I saw this on Oh She Glows and just had to give it a try. After all, what better way to start your day than with a steaming bowl of pumpkin deliciousness? The answer is, there is no better way.
So without further ado…… Here is the recipe:
1/3 cup regular oats
1 cup almond milk (try using vanilla sweetened almond milk for a sweeter oatmeal).
1/2 tsp pure vanilla extract
1/2 cup pumpkin
1/2 tbsp chia seeds (you can omit if you don’t have them and don’t want to go buy them. The oatmeal just might not be quite as thick.)
Pinch of sea salt
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp nutmeg
In a medium sized pot, heat the oats and almond milk over medium heat until it comes to a low boil. Stir in the pumpkin and chia seeds. Heat over low-medium for about 5-7 minutes, stirring frequently. Now add in the spices and vanilla and heat for another 5-7 minutes, stirring frequently. Pour into a bowl and add any desired toppings.
I chose to pour on some bourbon maple syrup – a good decision. You could also try chopped nuts, chocolate chips, or perhaps a sliced banana. Let me know if you decide to try it what toppings you put on.
