Cheesy quinoa bites!
These were super easy to make and very tasty, especially when dipped in pizza sauce.
I mixed about three cups cooked quinoa with about a quarter cup egg whites, half to three quarters cup reduced fat mozzarella cheese, dried oregano and basil, salt, pepper, and minced garlic. Push into a mini muffin tin and bake at 350 for about twenty minutes. Enjoy!
