I recently made this Greek Garbanzo Bean Salad, and man was it tasty. It was really easy to make, and we definitely had no trouble finishing it. It tasted so light and healthy (which it was thanks to all those veggies and the garbanzos, which like any bean worth it’s salt is high in protein and fiber). I used this recipe:
The only changes I made were to use two large tomatoes (because I don’t like how sweet the Cherry ones are), and I omitted the olives cause I don’t like ‘em. Also, if you wanna make this even healthier, use reduced fat Feta cheese, and light Italian dressing.
And it’s so pretty!
