In a saucepan boil 2 cups water, then add 1 cup quinoa (i used red) and a lil salt. Reduce heat to low and simmer, covered for 20ish minutes till the water’s all absorbed and quinoa is light and fluffy-like. Allow to cool a bit.
In large bowl, combine cooked quinoa, 3/4 cup cheese (I used reduced fat mozarella), 1/2 cup cottage cheese (i used low fat), 1 medium carrot (shredded), 3 eggs, 2 tbsp flour, 2 diced green onions, 1/2 tsp sugar, 1/4 tsp pepper, 1/4 tsp cumin, 1/8 tsp salt, and 1/8 tsp garlic powder.
Heat a frying pan and some non-stick spray over medium heat. Drop batter by 1/4 cup-fulls onto pan and using a flat spatula, mold them into 1/2 think circular patties. Fry till golden brown (about 4 or 5 minutes each side). I got 12 patties out of this.
