Parmesan roasted asparagus. Super tasty!
Just take a bunch of asparagus, cut off the hard part on the ends, and then one by one roll them first in 2 egg whites, then roll in a mixture of: 1/4 cup flour, 1 cup panko breadcrumbs, 1/4 cup parm cheese, salt and pepper. Bake on a wire rack on a cookie sheet (or on a broiler pan as i did) for 15 minutes at 425. Enjoy!
