Beat togehter 1 cup softened butter and 3/4 cup sugar with an electric mixer.
Add in 1 1/2 cups shredded carrots, 1 beaten egg, and 1/2 tsp vanilla, and mix well.
Add in 2 cups flour, 2 tsp baking powder, and 1/2 tsp salt, and mix pretty well. Drop by tsps onto ungreased baking sheets. Bake at 375 for ten minutes.
For the frosting, mix a little more than a cup of powdered sugar and the zest from one whole orange, with enough OJ to get the consistency you want. ( I just squeezed 1/2 of the orange in there). Frost when the cookies have cooled.
