Black Bean Brownies

I’m sure by now you’ve all heard of people putting black beans into brownie recipes to try to make them healthier.  I’ve tried it before and wasn’t super impressed.  However, the other day I came across an intriguing new recipe on one of the blogs I follow (Chocolate Covered Katie), so I decided to give it another try.

I was happily surprised by these brownies.  No, of course it’s not the best brownie I’ve ever tasted (just being honest with you), but they are pretty good.  And with only a little over 100 Calories per brownie with about 3 grams of fiber and 3 grams of protein, it’s definitely a dessert worth giving a shot.  In case you’re interested, here is the link to the original post:  Black Bean Brownies.

Here is the recipe as I followed it…

Ingredients:

1 15oz can black beans, rinsed and drained
2 Tbsp cocoa powder
1/2 cup quick oats
1/4 tsp salt
1/3 cup agave nectar
2 tbsp sugar
1/4 cup vegetable oil
2 tsp pure vanilla extract
1/2 tsp baking powder
2/3 cup chocolate chips

Directions:

1. Preheat oven to 350 F.
2. Combine all ingredients except chips in a high powered blender like a vitamix. Pour into a greased 8×8 pan.

here are all your ingredients in the blender…..

3. Stir the chips into the mixture in the pan.

and here it is all ready to be put in the oven….

4. Cook 18-20 minutes, then let cool.

and here is the final product….

My brownies were a little droopy (sad face :-(  )

But, they tasted good, and that’s what’s really important.
